Membrane Fatty Acid Explorer

A cell membrane has to stay fluid to work, but cold makes the fatty acid tails of its phospholipids pack together and stiffen. Organisms respond by building in more unsaturated fatty acids, whose kinked tails cannot pack tightly and keep the membrane loose. Here you can compare fish from cold and warm waters and see the difference.
