Glycogen Hydrolysis Lab

Animals store energy as glycogen, a branched polymer of glucose whose bonds form when water is removed and break when water is added back. Hydrolysis of those bonds frees glucose for respiration. In this lab you break glycogen down and build glucose back up into disaccharides and longer chains.
